- 1 can Rotel (diced tomatoes and green chilies, not drained)
- 1 can black beans (rinsed and drained)
- 1 can pinto beans (rinsed and drained)
- 2 cups frozen whole kernel corn (no need to thaw; or 15 oz can, drained)

- 1 cup shredded cheddar cheese
- Sliced avocado, sour cream, tortilla strips
Instructions
- Cook the Turkey and Aromatics: Start by heating 1 teaspoon of mild-flavored oil in a large stockpot or Dutch oven over medium heat. Add 1 pound of ground turkey, 1 cup of chopped onion, and 2 chopped garlic cloves. Sauté until the turkey is no longer pink and the onions are soft and translucent.
- Season the Soup: Sprinkle 2-4 tablespoons of taco seasoning (or 1 package of store-bought taco seasoning) over the meat and onion mixture. Stir well to ensure the seasoning is evenly distributed throughout.
- Add the Liquids and Vegetables: Pour in 3 cups of beef broth and 2-3 cups of tomato juice, adjusting the amount based on your preference for soup consistency. Add 1 can of undrained Rotel, 1 can of drained and rinsed black beans, 1 can of drained and rinsed pinto beans, and 2 cups of frozen corn. Stir everything together until well mixed.
- Simmer the Soup: Bring the soup to a simmer over medium heat. Let it cook uncovered for at least 20 minutes, allowing the flavors to meld together. For a deeper flavor, cover the pot and let it simmer for an additional 40 minutes.
- Serve with Toppings: Ladle the soup into bowls and top with shredded cheddar cheese, sliced avocado, a dollop of sour cream, and crispy tortilla strips if desired. Enjoy!
