Try these strawberry overnight oats for a simple, make-ahead breakfast with real strawberries, creamy oats, and vegan options.

  • Total Time: 4 hours 10 minutes
  • Yield: 4 1x

Ingredients

Scale
  • For the Strawberry Milk:
  • 1 cup fresh or frozen strawberry halves
  • 1¾ cups creamy non-dairy milk
  • ¼ cup unsweetened vegan yogurt (or replace with more milk)
  • 2 tbsp grade A maple syrup (add more to taste)
  • 1 tsp vanilla extract
  • Juice of ½ small lemon (about 1 tbsp)
  • Pinch of salt
  • For the Oatmeal:
  • 2 cups quick-cooking or rolled oats
  • 2 tbsp chia seeds or ground flaxseed
  • ¾ cup diced strawberries
  • Topping Suggestions:
  • Nut butter
  • Hemp hearts
  • Chopped almonds

Instructions

  1. Blend the strawberry milk: Start by adding the strawberries, non-dairy milk, vegan yogurt, maple syrup, vanilla, lemon juice, and a pinch of salt to your blender. Blend on high for 45-60 seconds, or until the mixture is smooth and the strawberries are fully incorporated. This will be your dreamy pink strawberry milk!
  2. Combine the oats and chia seeds: In a large mixing bowl, add the oats and chia seeds (or flaxseed, if you’re using that instead). Give it a quick stir to evenly distribute the seeds through the oats.
  3. Pour in the strawberry milk: Now, pour the strawberry milk over the oats and chia seeds. Add the diced strawberries, then stir everything together until the oats are well-coated with that lovely pink mixture. Let it sit for about 5 minutes to start thickening.
  4. Final mix: After a few minutes, you may notice a bit of extra liquid on top. Just give it one more good stir to make sure everything is well-combined and ready to soak.
  5. Store and chill: Transfer the oat mixture into jars or containers with lids. Pop them in the fridge for at least 4 hours, but overnight is best. By morning, you’ll have perfectly soft and flavorful oats ready to enjoy!

Notes

Strawberry overnight oats will keep in the fridge for up to five days, making them a fantastic option for meal prep. Just store each portion in an airtight container, and they’ll be ready whenever you need a quick breakfast. If you prefer your oats warm, you can microwave them for about 30-45 seconds, stirring halfway through. Just add a splash of extra milk if they’re too thick after reheating.
