For the Blondies:
- 1 cup unsalted butter (at room temperature)
- 3/4 cup sugar
- 1 large egg
- 1/4 cup fresh-squeezed lemon juice (about 1–2 lemons)
- 2 1/4 cups all-purpose flour

- 1/2 tsp salt
- 1 cup diced fresh strawberries (approximately 6–7 medium strawberries)
For the Glaze:
- 1 cup powdered sugar (sifted)
- 1 Tbsp strawberry puree (from about 2 large strawberries)
- 1 Tbsp lemon juice (or enough to achieve a spreadable consistency)
Instructions
- Preheat the Oven: Start by preheating your oven to 350°F (175°C). This will ensure it’s at the right temperature when your batter is ready.
- Prepare the Baking Pan: Line a 9-inch square baking pan with parchment paper, leaving overhangs on the sides. This step is optional, but it makes removing the blondies from the pan much easier.
- Cream the Butter and Sugar: In a large mixing bowl, cream together the unsalted butter and sugar using a hand or stand mixer until the mixture becomes light and fluffy, about 3-4 minutes.
- Add the Egg and Lemon Juice: Beat in the egg until fully incorporated. Follow with the fresh-squeezed lemon juice. It’s okay if the lemon juice does not fully mix in at this stage.
- Mix the Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until no more dry flour remains. The dough will be thick.
- Fold in the Strawberries: Gently fold the diced strawberries into the batter, making sure they are evenly distributed throughout.
- Spread the Batter in the Pan: Transfer the batter to the prepared pan. Use an offset spatula to spread it evenly; the dough will be thick, so take your time to get a smooth layer.
- Bake: Place the pan in the preheated oven and bake for 30-35 minutes. The blondies should be just beginning to turn golden around the edges, and the center should be set. A toothpick inserted into the center should come out moist but not wet. Avoid over-baking to prevent the blondies from drying out.
- Cool Completely: Allow the blondies to cool completely in the pan on a cooling rack before adding the glaze.
