These slow cooker beef fajitas are tender, juicy, and packed with smoky flavor. A gluten-free, no-fuss dinner favorite!

  • Total Time: 8 hours 10 minutes
  • Yield: 6 1x

Ingredients

Scale
  • 1.2 kg Stir fry beef
  • 2 Bell peppers sliced
  • 1 Carrot jullienned
  • ½ Sweet onion optional
  • 200 mL Tomato sauce
  • ¼ cup Broth
  • 1 tbs Chili powder
  • 1.5 tbs Cumin
  • ½ teaspoon Paprika
  • 1 teaspoon Salt
  • 2 teaspoon Garlic powder

Instructions

1. Prep the veggies

Slice the bell peppers into thin strips and julienne the carrot. If you’re using onion, slice it thinly. This ensures everything cooks evenly and blends well with the beef.

2. Load up the slow cooker

Place the beef at the bottom of the slow cooker and add the sliced vegetables on top. This layering prevents the beef from drying out as it slowly cooks.

3. Pour in the liquids

Evenly pour the tomato sauce and broth over everything. These will create a rich sauce that keeps the meat juicy.

4. Season generously

Mix the chili powder, cumin, paprika, salt, and garlic powder in a small bowl. Sprinkle the seasoning over the meat and vegetables, then give everything a quick mix to ensure the flavors are well distributed.

5. Let the slow cooker do the work

Set the slow cooker to low and let it work its magic for 8 hours. The long, slow cooking time allows the beef to become incredibly tender while letting the flavors meld together beautifully.

Notes

How to serve these fajitas like a pro

Fajitas are all about the presentation. Pile the beef and veggies onto a platter and serve with warm gluten-free tortillas on the side. Garnish with fresh cilantro, lime wedges, and a dollop of sour cream or guacamole. If you want to go the extra mile, char the tortillas over an open flame for a hint of smokiness.
