Crispy salmon bites coated in a sticky honey garlic glaze. Perfect for dinner or as an appetizer, this quick recipe is full of flavor!

  • Total Time: 25 minutes
  • Yield: 4 1x

Ingredients

Scale
  • Salmon Ingredients:
  • 1 ½ lbs salmon, skinless, cut into 1-inch cubes
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¾ tsp salt
  • 1 tsp ground black pepper
  • 3 tbsp olive oil (divided use)
  • Sauce Ingredients:
  • 2 tsp garlic, minced
  • 1 tsp fresh ginger, grated
  • 3 tbsp soy sauce (use non-alcoholic, naturally brewed, or tamarind-based alternatives)
  • 2 tbsp rice vinegar
  • ¼ cup honey
  • Garnish:
  • 2 tsp sesame seeds
  • 2 tsp chives, chopped

Instructions

1. Season the salmon

Start by patting the salmon cubes dry with a paper towel—this helps them crisp up nicely. In a bowl, toss them with paprika, garlic powder, onion powder, salt, and black pepper. Add a tablespoon of olive oil and give them a good massage to coat evenly. The seasoning is simple but hits all the right notes.

Pro tip: Don’t skip drying the salmon. Any extra moisture can prevent that perfect golden crust.

2. Sear the salmon

Heat a heavy skillet over medium-high heat and add a tablespoon of olive oil. Arrange the salmon cubes in a single layer—don’t overcrowd the pan. Let them cook for 4-5 minutes, flipping often, until they’re crispy and golden. Once done, transfer them to a plate and repeat with the remaining salmon.

Pro tip: Be gentle when flipping to avoid breaking the cubes apart. If they stick, give them a few more seconds to release naturally.

3. Make the sauce

In the same skillet, add the remaining oil along with minced garlic and grated ginger. Sauté for about a minute until fragrant, then stir in the soy sauce, rice vinegar, and honey. Let the sauce simmer for 3-5 minutes, stirring occasionally, until it thickens slightly.

Pro tip: Watch the heat here—if it’s too high, the honey can burn. Medium-low is your friend!

4. Coat the salmon

Return the crispy salmon bites to the skillet and toss them gently in the sauce until they’re well coated. Take a moment to check the seasoning and adjust if needed.

5. Garnish and serve

Sprinkle sesame seeds and chopped chives over the top for the finishing touch. These bites are perfect over a bed of steamed rice, quinoa, or even a simple salad.

Notes

Got leftovers? Lucky you! Store the salmon bites in an airtight container in the fridge for up to 2 days. To reheat, pop them in a skillet over medium heat with a splash of water to loosen the sauce. Avoid microwaving if possible—it can make the salmon dry and rubbery.

If you’d like to freeze them, do so before tossing them in the sauce. Thaw and reheat in a skillet, then coat with fresh sauce before serving.
