Ingredients
Scale
- 1 lb lean ground beef
- 1 cup diced yellow onions
- 10.5 oz condensed chicken broth
- 2 cups water
- 2 cups white Minute rice
- 1 1/2 cups ketchup
- 2 tsp Worcestershire sauce
- 1 tbsp onion powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tbsp brown sugar
- 3 cups shredded mozzarella and cheddar cheese blend
Instructions
- Cook the beef and onions: Start by heating a large sauté pan over medium-high heat. Add the ground beef and diced onions. As the beef cooks, crumble it with your spoon, mixing in the onions so they soften and become translucent. This should take about 5-7 minutes. Once the beef is browned, drain any excess grease.
- Add the broth and water: Pour in the condensed chicken broth and water, stirring to combine with the beef. This is what will help the rice cook to tender perfection.
- Stir in the rice: Add the Minute rice, making sure it’s fully submerged in the liquid. Let it simmer on medium heat, stirring occasionally to keep it from sticking to the pan. You’ll know it’s ready when all the liquid has been absorbed, which should take about 5 minutes.
- Add the sauce ingredients: Now for that signature Sloppy Joe flavor! Add the ketchup, Worcestershire sauce, onion powder, salt, pepper, and brown sugar. Stir well so everything is evenly mixed. Let it all simmer together for about 4 minutes to marry those flavors.
- Add the cheese: Remove the pan from heat and stir in 2 cups of the shredded cheese until it’s melted and gooey. Then sprinkle the remaining cup of cheese on top, cover the pan, and let it sit for a few minutes. This allows the cheese to melt and create a deliciously melty layer on top.
- Serve and enjoy! Grab a spoon, dish it out, and get ready to dig in. This dish is best enjoyed warm, with all that cheesy goodness.
Notes
How to serve it up
For a simple weeknight meal, you can serve this one-pot dish straight from the pan, family-style. If you’re looking to dress it up a bit, sprinkle some chopped green onions on top, or add a few dashes of hot sauce for color and flavor. Pair it with a crisp side salad or some garlic bread to round out the meal.
