A quick and healthy Mediterranean ground beef stir fry with tomatoes, spinach, and feta. Ready in 25 minutes!

Ingredients

  • 1 tablespoon olive oil
  • 1 red bell pepperdeseeded and diced
  • 1 pint cherry tomatoessliced in half
  • 8 ounces baby spinach (small tub)
  • 4 garlic clovesminced
  • 2 green onionthinly sliced, white and green parts separated
  • 1 pound ground beef
  • ½ teaspoon dried oregano
  • kosher salt and freshly ground black pepperto taste
  • 2 tablespoons crumbled feta

Instructions

  • Sauté the veggies: Heat your olive oil over medium-high heat in a large pan. Toss in the diced bell pepper and halved cherry tomatoes, cooking for about 4-5 minutes. The tomatoes should blister and get juicy—this is where they create that lovely sauce. Add the garlic and stir for another minute until fragrant.
  • Wilt the spinach: Now, add the spinach and the white parts of the green onion. Yes, the spinach will look like way too much for the pan, but don’t worry—it wilts down quickly! Cook for another 2-3 minutes until the spinach is soft. Remove all the veggies to a plate and set them aside for now.
  • Brown the beef: In the same pan (no need to wash it!), add the ground beef. Sprinkle in the dried oregano, kosher salt, and freshly ground black pepper. Break the beef apart with your spatula and cook until browned, about 7-8 minutes. If there’s a lot of grease, drain some of it off, but leave a little for flavor.
  • Bring it all together: Add the veggies back to the pan, along with the green parts of the onion. Stir everything together until it’s warmed through. Taste and adjust the seasoning if needed.
  • Finish with feta: Once it’s off the heat, sprinkle the crumbled feta on top and serve!

Serving and presentation ideas

For a complete Mediterranean feast, serve this stir fry over a bed of fluffy couscous or quinoa. You could also plate it up with some warm pita bread on the side. A sprinkle of fresh parsley or a drizzle of extra virgin olive oil would add a nice finishing touch. If you’re feeling fancy, a lemon wedge on the side adds a fresh burst of acidity that brightens up the dish.
