  • Total Time: 1 hour 45 minutes
  • Yield: 8

Ingredients

  • 3 pounds boneless beef chuck roast cut into 10 chunks
  • 3 tablespoons steak seasoning
  • 1 teaspoon kosher salt
  • 4 cloves garlic minced
  • 2 large white or yellow onions sliced
  • 1 ½ cups reduced-sodium beef broth divided
  • 1 tablespoon Better Than Beef Bouillon
  • 1 bay leaf
  • 2 tablespoons cornstarch

Instructions

  • Prep the beef – Start by cutting your chuck roast into 10 chunks. This step is essential for even cooking in the Instant Pot. Place the pieces in the pot and sprinkle on the steak seasoning and kosher salt. Give everything a quick toss with your tongs to coat each piece of meat.
  • Add broth and seasonings – Pour in 1 ¼ cups of the beef broth, then add the minced garlic on top of the meat. Trust me, the garlic will mellow out as it cooks, giving the roast a savory base. Next, layer the onions on top of the garlic; they’ll release their flavor into the beef and broth as they cook.
  • Bouillon and bay leaf – Add the Better Than Beef Bouillon and the bay leaf. The bouillon will melt into the broth, adding a rich, beefy taste that’s crucial for that French onion vibe.
  • Pressure cook – Lock the Instant Pot lid, set the valve to sealing, and select “Manual” on high pressure. Set the timer for 60 minutes. When it’s done, let the pressure release naturally for 25 minutes. (This is key for tender meat—quick release can make it tough.)
  • Finish up the gravy – After 25 minutes, remove the lid. Carefully take out the meat chunks (they should practically fall apart!) and remove the bay leaf. In a small bowl, mix the remaining ¼ cup of beef broth with 2 tablespoons of cornstarch until smooth. Press “Sauté” on the Instant Pot, stir in the cornstarch mixture, and cook for about 2 minutes, stirring regularly, until the gravy thickens.
  • Serve and enjoy – Pour the thickened gravy over the shredded meat, and you’re ready to serve!

Serving Ideas: Bring Your Pot Roast to the Table in Style

I love serving this pot roast with creamy mashed potatoes, which soak up that amazing gravy. You could also serve it over buttered egg noodles or even a bed of roasted root vegetables if you’re aiming for something a bit lighter. To garnish, a sprinkle of fresh parsley adds a nice pop of color and a hint of freshness.

For a true “French onion” experience, you could top each serving with a slice of toasted baguette, maybe even with a bit of melted Gruyère. Just like French onion soup but heartier!
