Ingredients
- 2 tablespoons olive oil
- 1 pound chicken tenderloins or breasts cut into bite size pieces
- 1 pound baby potatoes halved
- 1 ½ teaspoons paprika
- 1 ½ teaspoons poultry seasoning
- 1 teaspoon black pepper
- 2 tablespoons butter
- 2 cloves garlic minced
- ½ cup garlic parmesan wing sauce
- 1 cup shredded mozzarella
Instructions
- Preheat and prep: First things first, preheat your oven to 400°F. You’ll want to start with this step so the oven’s nice and hot when we’re ready for those potatoes.
- Season the chicken and potatoes: Trim any excess fat off your chicken and cut it into bite-sized pieces. Toss it in a large bowl with one tablespoon of olive oil. Do the same with the halved baby potatoes in a separate bowl. Now, mix your paprika, poultry seasoning, and pepper in a small bowl, then sprinkle half over the chicken and half over the potatoes. This ensures everything is well-seasoned and delicious.
- Roast the potatoes: Spread your seasoned potatoes out on a baking sheet and pop them in the oven for about 20 minutes. The goal here is to get them golden and crispy. (Tip: Don’t crowd the pan! Give the potatoes space so they crisp up nicely.)
- Cook the chicken: While your potatoes are roasting, heat up a large skillet with a tablespoon of olive oil over medium-high heat. Add the seasoned chicken and cook for about 7-10 minutes, stirring occasionally, until the chicken is browned and fully cooked through. (I’ve learned the hard way—don’t walk away from the stove here! Chicken can overcook quickly.)
- Add garlic and butter: Once the chicken is cooked, add your butter and minced garlic to the skillet. Let it all meld together for a minute or two, stirring to prevent burning. The garlic should smell amazing by now.
- Combine and sauce it up: Take the potatoes out of the oven and add them to the skillet with the chicken. Stir everything together, then pour in that glorious garlic parmesan sauce. Toss well so everything is coated in that creamy, cheesy goodness.
- Cheese time: Sprinkle shredded mozzarella all over the top of the skillet. Cover it with a lid (or foil if you don’t have one), and let the cheese melt for about 5 minutes. Once it’s all melty and irresistible, it’s ready to serve.

Serving ideas
This Garlic Parmesan Chicken and Potatoes is a complete meal on its own, but if you want to add some sides, a simple green salad or roasted broccoli would complement it perfectly. For presentation, serve it straight from the skillet for a rustic, family-style feel. Garnish with a sprinkle of fresh parsley for a pop of color.
