Ingredients
- 1/2 lb. ground beef
- Salt and pepper (to taste)
- Pinch of red pepper flakes (optional, for added heat)
- 3/4 cup Pale Ale (or your preferred non-alcoholic beer alternative)
- 1/2 cup Pepper Jack cheese, shredded (adds a spicy, creamy kick)
- 16 oz Velveeta cheese, cubed (for that smooth, classic queso texture)
- 1 (14.5 oz) can Rotel Tomatoes, partially drained (for freshness and mild spice)
- 1 cup black beans, drained and rinsed (provides added protein and texture)
- 1/4 cup red onion, finely diced (for a sharp bite)
- 1/4 cup fresh cilantro, chopped (adds a bright, fresh flavor)
Instructions
- Cook the ground beef: Start by heating a large, high-walled skillet over medium-high heat. Add the ground beef, and season with salt and pepper to taste. Cook until fully browned, breaking it up into crumbles as it cooks. Once the beef is cooked through, drain any excess grease from the skillet.
- Add spice and beer: Lower the heat slightly, then sprinkle in a pinch of red pepper flakes for a little extra heat (optional). Pour in the Pale Ale and stir, allowing it to simmer for about 4-5 minutes. The beer will reduce slightly, adding depth to the dish without overwhelming the flavors.
- Melt the cheeses: Reduce the heat to medium-low. Add the cubed Velveeta and shredded Pepper Jack cheese to the skillet. Stir frequently to combine the cheeses with the beef. As the cheeses melt, they will create a smooth, creamy sauce.
- Mix in the beans and vegetables: Once the cheese has fully melted, stir in the drained black beans, finely diced red onions, and chopped cilantro. These ingredients add texture and freshness to balance the creaminess of the queso.
- Incorporate the tomatoes: Add the partially drained can of Rotel Tomatoes, including some juice if you prefer a thinner consistency. Stir the mixture until everything is fully combined. Let the queso simmer for about 5 more minutes, allowing the flavors to meld together.
- Serve and enjoy: Once heated through, transfer the queso to a serving dish and enjoy with your favorite tortilla chips, or serve it over nachos or tacos!
