Ingredients
- 2 lb lean ground beef, (90/10 or 93/7 fat content)
- 1/2 Tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1/2 large yellow onion, finely diced
- 1/4 cup mayonnaise
- 8 slices medium cheddar cheese
- 6 oz medium cheddar, shredded (or used more sliced cheese)
- 24 dinner rolls, (or use 2 packs of 12)
- 2 Tbsp unsalted butter, melted, plus more to grease baking sheet
- 1 Tbsp sesame seeds
Instructions
- Preheat and prep: Start by preheating your oven to 350°F. Butter the bottom of a rimmed baking sheet to prevent sticking. Trust me, the butter also adds flavor to the base of the rolls—no one likes a dry bottom bun!
- Cook the beef and onions: Heat a large skillet over medium-high heat and add the olive oil. Once it’s hot, toss in the diced onions. Sauté until they start to soften, about 3 minutes. Add the ground beef and break it up with your spatula. Season with salt, pepper, and garlic powder, and cook until the beef is no longer pink. Tilt the skillet and spoon off any excess fat so the sliders don’t turn greasy.
- Add the mayo: Stir 1/4 cup of mayonnaise into the beef mixture. This little trick keeps the beef juicy and adds a hint of creaminess. It might sound odd, but it works—trust me!
- Assemble the sliders: Cut your dinner rolls in half horizontally. Place the bottom halves on the buttered baking sheet. Line the bread with the sliced cheese, then spread the beef mixture evenly over the cheese. Press it down with the back of your spatula to square off the edges. Sprinkle the shredded cheddar on top of the beef.
- Top it off: Place the tops of the rolls on the sliders, cut-side down. Brush the tops with melted butter, then sprinkle with sesame seeds for that classic look.
- Bake: Slide the baking sheet into your preheated oven and bake for 12-15 minutes, or until the cheese is melted and the tops are golden brown. The smell will be irresistible, so don’t be surprised if people start hovering around the kitchen!

How to serve and present your sliders
For a party-worthy presentation, arrange the sliders on a large platter and sprinkle some extra sesame seeds on top for garnish. I like to serve them with a variety of dipping sauces on the side—ketchup, mustard, BBQ sauce, or even a spicy aioli. If you’re feeling fancy, add some pickle slices or a side of coleslaw. For a fun touch, stick a toothpick in each slider to make them easy to grab.
