Ingredients
- 3 pounds of Yukon Gold or Russet potatoes (about 8 medium Yukon Gold or 4 medium Russet)
- 4 tablespoons unsalted butter, at room temperature, cut into 4 pieces
- 1 teaspoon salt, divided (plus more to taste)
- ¼ teaspoon pepper, or to taste
- ½ cup whole milk, warmed (plus more as needed)
Instructions
Step 1: Prepare the Potatoes Start by scrubbing the potatoes under cool water. You can either peel them or leave the skins on for a more rustic texture. If you leave the skins on, make sure they are cleaned well.
Step 2: Cut and Boil the Potatoes Cut the potatoes into 1-inch pieces to ensure even cooking. Place them in a large pot of cold water, adding ½ teaspoon of salt to the water. Bring the water to a boil over high heat and cook the potatoes for 12-15 minutes, or until they are tender when pierced with a fork but not falling apart.
Step 3: Drain and Dry the Potatoes Once cooked, drain the potatoes well in a colander. Immediately return the drained potatoes to the hot pot and allow them to sit for 2-3 minutes. This extra step helps evaporate any excess moisture, which is essential for achieving a smooth texture.
Step 4: Mash the Potatoes Add the pieces of room-temperature butter to the potatoes. Use a potato masher to begin mashing the potatoes until they reach your desired consistency. If you prefer smoother mashed potatoes, you can use a potato ricer for a more refined texture.
Step 5: Add Milk and Seasoning Gradually pour in half of the warm milk, along with the remaining ½ teaspoon of salt and ¼ teaspoon of pepper. Stir the mixture until it’s combined, then add the rest of the milk. Continue stirring until you achieve your desired creaminess. If you like your mashed potatoes a bit creamier, feel free to add more milk. Taste and adjust the seasoning as needed.
