  • Total Time: 25 minutes
  • Yield: 4 1x

Ingredients

Scale

For the Lettuce Wrap Sauce:

  • ¼ cup maple syrup, brown sugar, or coconut sugar: Adds a touch of sweetness that balances the savory components of the sauce.
  • ¼ cup coconut aminos, tamari, or soy sauce: This brings the salty, umami flavor that ties the whole dish together.
  • 2 teaspoons rice vinegar: Adds a slight tang, balancing the sauce.
  • 1 tablespoon toasted sesame oil: Rich, nutty flavor essential for that signature Asian flair.
  • ¼½ teaspoon red pepper flakes (optional): For a hint of heat, adjust based on your spice preference.
  • 2 teaspoons arrowroot powder or cornstarch: Helps thicken the sauce to coat the filling evenly.

For the Ground Beef Filling:

  • 1 tablespoon olive oil: Used for sautéing the beef.
  • 1 lb ground beef: The base of the filling. Ground turkey or chicken can be used for a leaner option.
  • 2 cloves garlic, minced: Provides a pungent, aromatic base.
  • 2 teaspoons grated fresh ginger: Adds a zesty kick that complements the garlic.
  • 1 medium red bell pepper, finely diced: Brings sweetness and a pop of color.
  • ½ cup shredded carrots: Adds crunch and mild sweetness.
  • 4 whole green onions, sliced into 1” pieces: Offers freshness and a slight bite to the filling.
  • Kosher salt and ground pepper, to taste: Adjust according to your seasoning preference.
  • Sesame seeds, to taste: For garnish and a nutty crunch.
  • Boston Bibb lettuce: The wrap itself. Its large leaves are perfect for holding the filling without tearing.
  • Steamed white rice or sautéed cauliflower rice (optional): To serve if you want extra heartiness with the wraps.

Instructions

1. Prepare the Sauce

Start by whisking together the sauce ingredients. Combine maple syrup, coconut aminos, rice vinegar, sesame oil, and red pepper flakes (if using) in a bowl or measuring cup. Whisk well to ensure all ingredients are fully incorporated. Next, add the arrowroot powder (or cornstarch) and whisk again until smooth. Set this sauce aside.

2. Cook the Ground Beef

In a large skillet, heat olive oil over medium-high heat until it shimmers. Add the ground beef and cook, breaking it up with a wooden spoon, until it’s browned and no longer pink. This should take about 5 minutes.

3. Add Aromatics

Once the beef is cooked, stir in the minced garlic and grated ginger. Cook these together with the beef for another 1-2 minutes, until they become fragrant and enhance the overall flavor.

4. Add Vegetables

Next, toss in the diced bell pepper and shredded carrots. Stir everything together and cook for 3-4 minutes until the veggies are slightly softened but still maintain some crunch.

5. Finish with Sauce

Pour the prepared sauce over the beef and vegetables in the skillet. Stir well to coat everything evenly. Let the mixture simmer for 2-3 minutes until the sauce thickens slightly. Taste for seasoning and add salt and pepper if necessary.

6. Add Green Onions and Assemble

Finally, stir in the green onions and cook for another minute. Spoon the beef mixture into individual Boston Bibb lettuce leaves, top with sesame seeds, and serve. For extra heartiness, you can also add some steamed white rice or sautéed cauliflower rice inside the wraps.

Notes

Serving Suggestions

These wraps can be enjoyed on their own or paired with a side of steamed white rice or cauliflower rice. If you want to make them part of a bigger meal, serve alongside a light cucumber salad or stir-fried vegetables for a complete Asian-inspired dinner.
