Ingredients
- 250g ground beef: Provides a rich, savory base for the dish. You can substitute with ground chicken or turkey if desired.
- 2 tablespoons soy sauce: Adds a salty, umami depth to the sauce. You can use tamari for a gluten-free option.
- 1 teaspoon grated ginger: Fresh ginger adds warmth and a hint of spice.
- 2 teaspoons white pepper powder: White pepper offers a milder heat compared to black pepper, perfect for balancing the flavors.
- 2 tablespoons corn flour (cornstarch): Used to thicken the sauce.
- 2 tablespoons spring onion (chopped): Provides freshness and a mild onion flavor. Can be swapped with green onions or chives.
- 120g vermicelli noodles: The noodles soak up all the sauce and provide the perfect base for the beef.
- 2 tablespoons Chinese dark vinegar (optional): Adds a tangy flavor to balance the dish’s richness.
- 2 tablespoons Chinese chili oil (optional): For those who like it spicy, this chili oil gives the dish a fiery kick.
Instructions
Step 1: Cook the Ground Beef Heat 2 tablespoons of oil in a saucepan over medium heat. Add the 250g ground beef, breaking it apart with a wooden spoon as it cooks. Continue stirring until the beef turns slightly browned, about 5-7 minutes.
Step 2: Add Flavorings Once the beef is browned, add 1 teaspoon grated ginger and 2 tablespoons soy sauce. Stir everything together and let it cook for 10-15 seconds, allowing the ginger to release its fragrance.
Step 3: Simmer the Sauce Add 1 cup of water to the beef mixture along with 2 teaspoons white pepper powder. Stir to combine. Cover the saucepan with a lid and let the mixture simmer for about 10 minutes. Make sure to check on it occasionally, adding more water if too much evaporates.
Step 4: Prepare the Noodles While the beef is simmering, bring a large pot of salted water to a boil. Add the 120g vermicelli noodles and cook according to the package instructions, usually 3-4 minutes. Be sure to stir occasionally to prevent sticking. Once done, drain the noodles and set them aside.
Step 5: Thicken the Sauce Mix 2 tablespoons of corn flour (cornstarch) with 1/2 cup of water, ensuring there are no lumps. Pour this mixture into the beef sauce, stirring constantly until the sauce thickens evenly.
Step 6: Combine and Serve Toss the cooked noodles into the beef sauce, ensuring the noodles are evenly coated. Serve hot, garnished with chopped spring onions. For extra flavor, add 2 tablespoons of Chinese dark vinegar and a drizzle of chili oil if desired.
