- Crust Ingredients:
- 2 cups of graham cracker crumbs
- 3 tablespoons of packed light brown sugar
- 1 teaspoon of cinnamon
- 7 tablespoons of melted unsalted butter
- Filling Ingredients:
- 1 (8 oz) package of softened cream cheese
- 1/2 cup of granulated sugar
- 1 teaspoon of vanilla extract
- 1 (16 oz) container of thawed Cool Whip, divided
- 2 (21 oz) cans of apple pie filling
- 1/4 cup of chopped pecans
Instructions
- Make the crust: Start by combining the graham cracker crumbs, brown sugar, cinnamon, and melted butter in a bowl. Stir until the crumbs are evenly coated and look like wet sand. Pour this into a 13×9 baking dish and press it down firmly. You can use the bottom of a measuring cup to get it nice and flat. Pop this into the freezer while you work on the filling.
- Prepare the cream cheese layer: In another bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth. This should take about 2-3 minutes with a hand mixer. Make sure there are no lumps—you want this layer to be as smooth as possible. Once it’s nice and creamy, fold in half of the Cool Whip (about 8 ounces) gently with a spatula. This keeps the layer light and fluffy.
- Assemble the layers: Take the baking dish out of the freezer and spread the cream cheese mixture over the crust. Use your spatula to spread it evenly, going all the way to the edges.
- Add the apple pie filling: Spoon the apple pie filling over the cream cheese layer. Try to arrange the apple slices so they’re evenly distributed, creating a beautiful layer of fruit.
- Top with remaining Cool Whip: Gently spread the rest of the Cool Whip over the apple layer. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or even better, overnight. The chilling time lets the flavors meld together.
- Finish with pecans: Just before serving, sprinkle chopped pecans over the top. They add a lovely crunch that contrasts with the creaminess of the filling.
Notes
Apple Delight is best served cold, straight from the fridge, and it stores well for a few days. Simply cover the dish tightly with plastic wrap and refrigerate for up to 3 days. Since this is a no-bake dessert, reheating isn’t necessary (or recommended). If you’re storing leftovers, avoid adding the pecans until just before serving so they stay crunchy.
